This Fabulous Friday I want to talk about a very fabulous woman I know. You all know her too as she is my best friend, business partner, co-worker and soul mate. Kristina and I have been friend for over 15 years and she is fabulous for her heart and the way she treats people, she is an amazing mother and daughter, sister, and friend. She will make you laugh and cry all at the same time, so in honor of this fabulous Friday I am going to talk about how she makes me laugh.

I know this will sound horrible but one thing that she does to make me laugh is she falls down. Not on purpose it is on accident and yes this sounds horrible but it’s the things she does to fall down that crack me up. I have a couple stories to share with you that I hope will make you laugh as well and also point out what I am talking about.
The first time I realized this was not back in high school but was actually in college. It was the end of winter and we were leaving class and going to head to lunch. Now for those of you who are not familiar with Moses Lake, you should know that we usually have mild winters with not much snow and it’s mostly just cold. This winter was almost over and there was no snow left to speak of. Well no where but one spot of frozen snow that had been left by the snow plow that was not completely melted yet. This was not a small spot but it was off to the side of the parking lot and very visible. To everyone except Kristina I guess because when walking to her car she decided to walk over it. I don’t know why since there was no need but all and all she walked over it which of course was frozen and made her slip. She slips and falls smack on her back and her backpack goes flying. She is laying there going “Owe” and I can’t help it but I start laughing my ass off. Then this guy from the other side of the parking lot comes running over yelling are you all right and to help her up. Of course I am getting looks of pure hatred shot as me as I am crying from laughing so hard. Now if that story still makes me sound bad a few days later after class we decide to go to lunch again. We walk out to our car and this time Kristina does not walk over the snow mountain. We separate to go to our own cars and I get in mine and buckle up and look in my review mirror to see if she is at her car yet and I don’t see her, assuming she was fast I put the car in reverse and back out of my spot and continue to drive off. I look back in my review mirror and see her sitting on ground with her backpack flung and a look of embarrassment on her face. Once we got to the restaurant I asked what happened and she was all “Oh I fell again.” This got me thinking of how often she fell and she informed me that it happened quite often. Since then I have been around to see her fall a lot. It’s always different and amusing such as one time she fell in a hole in my back yard while drunk, another time she was drunk and fell out of my car at a stop sign. Sometime she trips over rugs, fuzz balls, and her shadow. Every time I laugh and of course people give me the glare like I am so evil but if you know Kristina you know its just part of her personality. She is awesome and fabulous and I am very thankful to have her in my life.

I was asked to write a guest post about my sacred spot or moment in time.  You would think this would be an easy request, but it seems I have many more sacred "spots" and "moments" then I had imagined.  Mainly because I believe anywhere you are can be a sacred space, if you want it to be.  A friend once shared with me that she makes every moment  a sacred moment. She is a wise, woman and a true inspiration and I do just that. Every moment is sacred. Vacuuming the living room in my diamond tiara - sacred. Folding my favorite t-shirt fresh and still warm from the dryer - sacred. Washing my favorite glass or coffee cup after sharing a beverage and tale with a friend, sacred.  Washing those dishes that I just shared a meal with and filled my belly with, sacred. Laying in the middle of my back yard during a summer rain shower on the fresh cut grass, unbelievably sacred.  Taking a moment while driving to work in the morning to marvel over the beautiful blue sky and tree lined highway, sacred. Drawing a banishing pentagram in the steam on my shower door as I wash away the negative  energy from a busy work day, sacred. So how do I pick just one?

I decided to go with one of my recent "spots". There is a HUGE old Oak down by the river where we use to live. If you part the vale just right... at just that right moment... that old oak beckons you to come visit and  sit for a spell. She comes to me in my dreams. In my visions. I have taken her flowers, fresh baked cookies and treats. We have shared some homemade mead, even a delicious homemade cordial or 2. We have somewhat of a secret love affair and it is indeed wonderful. I can sit on a rock that juts out slightly into the river and day dream for hours. It truly is magickal...a sacred space. So you tell me... What is your sacred space?

Today we are introducing another of our specialized days of the week. Top Ten Tuesday! We have done a few top ten lists and they have been pretty popular, so we decided to make it a regular feature! Today we have Top Ten Things you Shouldn't buy at a Thrift Store!

I should warn you... I wanted to edit the pictures to make them look Vintage-y. In the process I discovered a fun feature where I could ad stickers to the pictures.... and I went a little crazy! But I was having a LOT of fun doing it!

But either way... don't buy one that somebody has donated.... I mean... think about where this has been!!!!

PS The blue bow was added to cover a gratuitous cleavage shot that we didn't think you were ready for yet! I figure you want to get to know us better before we get to that! ;)

Hello all I just had to stop in and do this post. Kristina and I were talking today about some funny stories we have including the one where during class she tried to draw a picture of Uncle Sam with a penis. Yes that is right I said it a PENIS. That story will be for later this week when I can get the best pictures for it. However when we got back Kristina got her 3rd tattoo and of course made some really funny face and that made me think of the funny faces she makes all the time. I just had to stop in and give you all a laugh.

Happy Monday Everyone, I hope that you have a fabulous day today and get all you want. However if you have a MONDAY as we all do sometimes, I have made a small list of things not to do at work on Monday and a few things you help you get through your Monday and of course some funny pictures to make you smile. So the next time you are having a Monday just remember that Amanda thinks you’re awesome and that any situation can be funny.

5 Things NOT to do on MONDAY:

Tell your boss “That’s not my job Fatty”

 Punch a co-worker in the face

Put saran wrap on your boss toilet seat

Use the phrase “I don’t give a shit”

Tell your boss you plan to be sick tomorrow

Things to think of to help you get through Monday:

You could be swimming with a shark right now

You could have toilet paper stuck to your shoe and have everyone notice

You could have forgotten to wear pants

You could be showering naked with carrot top

You could be hit by a car

You could be punched in the face by a co-worker

And last but not least you could be working for the president

There is always something worse then a Monday

In a well-made chopped salad, every bite is a confetti-burst of flavor. To achieve that here, we've combined equal-size bits of crisp, colorful vegetables -- a feature that also makes it easy for kids to eat. For the finale, try one of these homemade dressings: Creamy Blue Cheese or Old-Fashioned Buttermilk Ranch. Made fresh, they have a flavor that just can't be matched by bottled versions.

Ingredients
  • 1 romaine lettuce heart
  • 4 to 6 slices thick-cut bacon, cooked until crisp, cooled, and chopped
  • 1/2 pint grape tomatoes, halved
  • 2 carrots, peeled and thinly sliced
  • 1 yellow bell pepper, chopped
  • 1 English cucumber, halved lengthwise and thinly sliced
  • 1/2 cup chopped walnuts
  • Coarse salt and freshly ground pepper to taste
  • Salad Dressing (we suggest Ranch or Blue Cheese--see above)
Instructions
  1. Chop the lettuce heart into 1- to 2-inch pieces. Combine it with the bacon, other vegetables, and nuts in a large bowl and toss the mixture well.

  2. Keep the salad chilled until serving time. Then toss it again with enough dressing to lightly coat the vegetables, and season it with salt and pepper. Serves 6.

These delicious calzones are just like a folded over pizza. You have the delicious crust all the way around, and in the center is the delectable cheese, sauce, and other fillings of your choice. These delicious calzones can be a meat lovers dream, or a vegetarian's delight.

Ingredients
  • Batch of calzone dough
  • Cornmeal for sprinkling
  • 1 cup ricotta cheese
  • 1 egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 1 cup cubed mozzarella cheese
  • 1 1/2 tablespoons minced Italian parsley
  • 1/8 teaspoon salt
  • 20 to 28 slices pepperoni
Instructions
  1. Heat the oven to 425°.

  2. Mix all filling ingredients except pepperoni in a medium bowl.

  3. When the dough is ready, punch it down and form into 4 equal balls. On a lightly floured surface, roll or pat each ball into a 6- to 6 1/2-inch-diameter circle.

  4. Place one fourth of the filling (about 1/2 cup) on half of each dough circle, keeping a 1-inch border free. Place 5 to 7 slices of pepperoni in each calzone.

  5. Dampen the dough edges with water. Fold the dough semicircle over the filling and seal the edges by pinching them together. Place the completed calzones on an ungreased baking sheet sprinkled with cornmeal.

  6. Bake for 12 to 15 minutes, until golden.

  7. If you don't plan on eating the calzones right away, let the calzones cool and store them individually in small resealable plastic bags. Package the smaller bags in a large resealable freezer bag. Label and tape your bag of calzones to the container of Simple Sauce already in the freezer. To serve: Thaw the sauce and calzones. Heat the sauce for about 10 minutes in a pan until bubbly. Meanwhile, heat the calzones in a 400° oven for 15 to 18 minutes. When they're heated through, place the calzones on individual plates and ladle Simple Sauce over each. Serves 4.

Introduce your kids to the art of sushi rolling with these easy sandwiches. The tortilla does double duty as a rolling mat and a tasty wrapper.


Ingredients
  • 2 cups cooked sushi rice
  • 1/2 teaspoon salt
  • 2 tablespoons rice vinegar
  • 1/4 cup chopped green onion
  • 4 (10-inch) flour tortillas
  • 4 sheets nori, or 2 cups spinach leaves
  • 1/2 cup grated carrot
  • 1 cucumber, peeled, seeded, and cut lengthwise into 4 spears (we used the European variety)
  • 1 (8-ounce) package imitation crab meat
  • Soy sauce packets
Instructions
  1. In a small bowl, mix the rice with the salt, vinegar, and green onion.

  2. For each wrap, heat a tortilla in the microwave for 10 seconds. For an authentic sushi taste, place a sheet of nori on the tortilla (or use 1/2 cup of spinach if your family's not game for the nori). Spread about 1/2 cup of the rice mixture on top of the nori, then add a layer of grated carrot. Next, place a cucumber spear and a quarter of the crab meat near one side of the nori. From that side, roll up the wrap and tuck in the ends.

  3. Tightly cover each sandwich in plastic wrap and refrigerate for up to 24 hours. Cut in half and serve with soy sauce for dipping. Makes 4 wraps

Like tacos, only neater to eat, taquitos have plenty of kid appeal. In Mexico, they're often deep-fried, but baking them works well too. It's easier and healthier, and the tortillas still turn golden brown and crispy around the edges. Served with salsa and sour cream, they make a quick and satisfying lunch or dinner.


Ingredients
  • 1 tablespoon vegetable oil, plus more for brushing on the taquitos
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 3/4 pound lean ground beef
  • 1 cup salsa, plus more for dipping
  • 2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 (6-inch) flour tortillas
  • 1/2 cup shredded Cheddar or Monterey Jack
  • Sour cream
Instructions
  1. Heat the oven to 400º. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook them for 3 minutes, stirring often. Add the beef and use a wooden spoon or a spatula to break it up while it cooks, until it is no longer red, about 3 minutes. Stir in 1/2 cup of the salsa, the chili powder, and the salt and pepper. Cook the mixture over low heat, stirring occasionally, for 10 minutes.

  2. Place the tortillas on a plate and cover them with damp paper towels. Microwave them until warm and pliable, about 45 seconds. Top each tortilla with 1/4 cup of the beef mixture, spreading it to an inch from the edges. Sprinkle cheese evenly over the beef.

  3. Roll up the tortillas and place them on a foil-lined baking sheet with the seam sides down. Brush the taquitos lightly with vegetable oil, then bake them until the filling is heated through and the tortillas are lightly browned, about 8 to 12 minutes. Serve them hot with sour cream and/or salsa. Serves 4 to 6.

These might be specific religions or beliefs, or a special tradition specific to a certain culture. This is a very broad topic and it may become more specific over time...

The other days we are introducing are Monday Night Recipes, Top 10 Tuesdays, and Fabulous Fridays.   Look for introductory posts for these this week.  We are both very excited to share so much more with you!
